Favorable weather conditions, exceptional soils, organic methods of growing grapes - all these factors make it possible to collect quality grapes from the vineyards for the production of Grand Cru wines. The climatic conditions are characterized by early spring with little rainfall, a cold northerly wind from the south of France, which protects the crop from the scorching sun, a significant difference between day and night temperatures. The vineyards of the Perrin et Fies company have one of the best terroirs of the South Rhone. The grapes grow on rocky, loose, and porous soils, thanks to which the vine develops a powerful root system. In recent years, the Geographico cooperative has achieved excellent results, becoming one of the most dynamically developing companies in Italy. At the moment, the number of producers-members of the cooperative has exceeded 200 people, in addition, the company employs first-class oenologists and technologists. The company is currently run by Luca Romeo and Marco Toti. The cooperative's holdings are located in the most prestigious area of Tuscany, with an area of 571 hectares, of which most of them have the DOCG classification. Chianti Classico is produced from 250 hectares of vineyards in the southern part of the region, at an altitude between 280 and 600 m above sea level. The aim of the cooperative is the production of wines that correspond to the traditions of different regions of Tuscany, as well as the use of technical innovations that could contribute to the quality of the wines. </p> <p> Currently, all the holdings of the cooperative are distributed between four estates. The main one, Geografico, is located in Gaiole in Chianti, Castello Tricherki in Montalcino, Borgo Alla Terra in San Giminiano and Le Presella in the town of the same name.

Domaine Faiveley has always paid particular attention to working in the vineyards. Throughout the year, the vineyards are carefully and carefully cultivated (processed). Each stage is important, starting from the selection of the appropriate soil to the vines. Pruning in winter, cutting off excess shoots in spring and green harvesting in summer are key steps to achieving excellent maturity and high quality grapes. </p> <p> Harvesting is usually done in September. When the grapes reach their ideal ripeness, grape pickers harvest the entire harvest by hand within 10 days. Grapes in small boxes are sent to the winery. There the bundles are placed on a conveyor belt and bunch by bunch are selected to leave only the best. This is followed by prolonged fermentation at low temperatures in wooden or stainless steel barrels. Usually, holes are punched in the barrel lids, which makes it possible to obtain a special color, tannins and all the aromatic combinations contained in the grape skins. </p> <p> After that, a vertical press is used, which was chosen for the accuracy and delicacy of pressing: thanks to it, very pure grape juice of the highest quality. The wines are matured in oak barrels in 19th century wine cellars, which provide ideal conditions for long aging. Then the best wine is manually poured from barrels into bottles without filtration, which adds concentration and richness to the taste.

Lucien Picard was well known in Sancerre in the middle of the last century. It was he who was one of the first in this region to start bottling wines for deliveries to Paris. The ancestors of the Crochet family have been engaged in winemaking since the 14th century. </p> <p> Currently, the Crochet Domain owns 38 hectares of vineyards located in the communes of Sancerre, Bue, Crezancy, Vinon, where white grapes of the Sauvignon Blanc variety (29 hectares) and red Pinot Noir (9 hectares in Cote de Bue and Clos du Roy). Crochet vineyards are located at an altitude of 240-260 meters above sea level and have a southern, southwestern and southeastern exposure. The soil wealth of the Sancerre region gives the wines of the estate a variety of aromatic nuances. </p> <p> The harvest at the Lucien Crochet farm is collected by hand. The berries are sorted and delivered to the winery in small containers. After pneumatic pressing, the purified grape juice is fermented in steel tanks under temperature control. The wines are aged in steel tanks and oak barrels, the proportion of which during aging varies every year depending on the type of cuvée and the quality of the crop.
